Foss Dietary Services
The mission of the Foss Dietary Services department is to consistently provide meals, snacks and nourishments, which meet each resident's individual nutritional and food preference needs. We have particular pride in our use of quality and fresh ingredients.
Alongside our talented and dedicated dietary staff, we host students from Shoreline Community College's Dietetic Technology Program.
Laura Gedicks, our Dietary Director, is a wonderful cook. She shares this recipe:
Italian Wedding Soup
Soups are meant to be made from what’s in your fridge. Because of this, I’ve never followed a recipe when making soup. The following ingredients make up my version of Italian Wedding Soup. You can decide on amounts based on your personal preferences: fresh spinach, sun dried tomatoes (not in oil), meatballs (you can make your own or buy pre-made), fresh basil, chicken base, vegetable base (if you can’t find this in the grocery store, substitute sauteed onions & celery), orzo (cook & chill ahead of time). Boil spinach in water. While spinach is cooking, heat meatballs. Add cooked meatballs, sun dried tomatoes and bases and simmer until tomatoes are soft. Just before serving add basil and orzo. Add salt and pepper to taste.
Periodically, Laura makes a special meal for the Village. For this particular meal, residents had a choice of:
Tossed salad or Yellow Gelatin
Phyllo-Wrapped Salmon or Apple Almond Stuffed Chicken Leg
Wild Rice, Asparagus, and a Dinner Roll
Blackberry Pie or a Special Diabetic Dessert
